White Lasagna Soup

A creamy and comforting white lasagna soup made with turkey bacon, perfect for cozy nights in.

  • 1 tablespoon olive oil
  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop into pieces.
  2. In the same pot, add the onion and garlic. Sauté until softened.
  3. Add the chicken broth, oregano, basil, salt, and pepper. Bring to a boil.
  4. Add the broken lasagna noodles and cook until al dente.
  5. Stir in the ricotta cheese, mozzarella cheese, Parmesan cheese, and spinach. Cook until the spinach wilts.
  6. Add the chopped turkey bacon back into the pot. Serve hot.

Notes

  • This soup can be made ahead of time and reheats well.
  • Feel free to add more veggies like zucchini or mushrooms.
