Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat together the granulated sugar, brown sugar, vegetable oil, and egg until smooth.
  4. Add the pumpkin puree and vanilla extract to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Line a cupcake tray with liners and fill each liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting.
