  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 cups fresh strawberries, diced
  • 1 cup whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Add eggs one at a time, beating well after each addition, and then stir in the vanilla.
  4. In another bowl, mix the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  6. Fold in the diced strawberries gently.
  7. Fill each cupcake liner about two-thirds full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cool completely, then top with whipped cream and additional strawberries.

Notes

  • For a fun twist, try adding lemon zest to the batter.
