Strawberry Earthquake Cake

  • 1 package strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries, diced
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix until well blended.
  3. Fold in the diced strawberries.
  4. Pour half of the batter into a greased 9×13 inch baking dish.
  5. In another bowl, beat together the cream cheese and powdered sugar until smooth. Spoon dollops of the cream cheese mixture over the batter.
  6. Pour the remaining batter on top and swirl gently.
  7. Sprinkle coconut and walnuts on top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For a richer flavor, add vanilla extract to the cream cheese mixture.
  • Serve with whipped cream for extra indulgence.
