Strawberry Crunch Poke Cake

A delightful strawberry cake with a crunchy topping that will please everyone.

Ingredients

  • 1 box strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup strawberry Jell-O
  • 1 cup boiling water
  • 1 cup whipped topping
  • 1 cup crushed graham crackers
  • 1/2 cup melted butter
  • 1 cup sliced strawberries

Instructions

  1. Preheat the oven as directed on the cake mix package.
  2. In a large bowl, mix the cake mix, water, oil, and eggs until well combined.
  3. Pour batter into a greased 9×13 inch baking dish and bake as directed.
  4. Allow the cake to cool, then poke holes in it with a fork.
  5. Dissolve the Jell-O in boiling water and pour over the cooled cake.
  6. Refrigerate until set, about 2 hours.
  7. Spread whipped topping over the set Jell-O layer.
  8. In a separate bowl, mix crushed graham crackers and melted butter, then sprinkle over the topping.
  9. Garnish with sliced strawberries and serve.

Notes

  • For a richer flavor, use fresh strawberries in the topping.
  • Can be made a day ahead and refrigerated.
