Spicy Creamy Cajun Chicken Pasta

  • 12 ounces penne pasta
  • 1 pound chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup bell pepper, sliced
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package directions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the diced chicken and Cajun seasoning and cook until chicken is no longer pink.
  3. Add garlic and bell peppers to the skillet and sauté for 2-3 minutes.
  4. Pour in the heavy cream and bring to a simmer. Stir in parmesan cheese until melted and combined.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper.
  6. Garnish with green onions before serving.
