These Soft Gingerbread Cookies have a unique twist with the addition of Strawberry Pop Tarts, making them the perfect treat for any occasion.

Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 cup crushed strawberry Pop Tarts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In another bowl, cream together the butter and brown sugar until smooth.
  4. Add the egg and molasses to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the crushed strawberry Pop Tarts gently.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to one week.
