Soft Gingerbread Cookies : Old Fashioned Iced Ginger Molasses Cookies

These soft gingerbread cookies are the perfect old fashioned iced treats, ideal for the holidays.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 cups powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the butter and brown sugar until fluffy.
  4. Add molasses and egg to the butter mixture, then gradually combine with the dry ingredients.
  5. Shape the dough into balls and place them on baking sheets.
  6. Bake for about 8 minutes or until set but still soft.
  7. Allow to cool before icing.
  8. For the icing, mix powdered sugar and milk until smooth, then drizzle over cooled cookies.

Notes

  • For chewier cookies, avoid overbaking.
  • These cookies can be decorated with various colors of icing.
