Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup brown sugar, packed
  • ½ cup unsalted brown butter, cooled
  • ½ cup molasses
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, spices, and salt.
  3. In another bowl, mix brown sugar with cooled brown butter until combined.
  4. Add molasses, egg, and vanilla to the butter mixture, then mix well.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Chill the dough for at least 30 minutes.
  7. Shape the cookies and place them on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are set.
  9. Allow to cool on the sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, some chopped candied ginger can be included.
  • These cookies pair well with a cup of tea or coffee.
