Ingredients

  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • ½ cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, cream butter and brown sugar until light and fluffy.
  4. Add the egg, molasses, and vanilla; mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Stir in the crushed candy canes.
  7. Drop rounded tablespoons of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until edges are set.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a twist, add white chocolate chips to the dough.
  • These cookies can be frosted with vanilla icing for extra sweetness.
