Smoky Roasted Sweet Potatoes with Chipotle Mayo

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1 teaspoon chipotle in adobo sauce
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into cubes.
  3. In a bowl, toss the sweet potatoes with olive oil, smoked paprika, garlic powder, and salt.
  4. Spread the potatoes on a baking sheet and roast for 25-30 minutes until tender and slightly crispy.
