  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1 tablespoon melted butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, oil, eggs, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix together the streusel ingredients: chopped pecans, brown sugar, and melted butter.
  6. Pour half the batter into a loaf pan, sprinkle half the streusel mixture on top, then add the remaining batter and top with the remaining streusel.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add chocolate chips to the batter.
