  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup cinnamon sugar for swirling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  6. Grease mini loaf pans and pour in half of the batter. Sprinkle cinnamon sugar on top, then add the remaining batter over it.
  7. Swirl the cinnamon sugar into the batter using a knife.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before removing from pans.

Notes

  • For a richer flavor, consider adding walnuts or pecans.
  • These mini loaves freeze well for up to three months.
