Simple Soft Bread : Pumpkin Streusel Bread

  • 2 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ cup chopped pecans
  • ½ cup brown sugar
  • 2 tablespoons melted butter
  • ¼ cup oats

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, eggs, and oil.
  3. In another bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Pour the batter into a greased loaf pan.
  6. In a small bowl, mix together the brown sugar, oats, pecans, and melted butter for the streusel topping.
  7. Sprinkle the streusel mixture over the batter.
  8. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For added flavor, you can include chocolate chips in the batter.
  • Serve with butter for a delicious treat.
