- 2 cups all-purpose flour
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 eggs
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ½ cup chopped pecans
- ½ cup brown sugar
- 2 tablespoons melted butter
- ¼ cup oats
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, eggs, and oil.
- In another bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Pour the batter into a greased loaf pan.
- In a small bowl, mix together the brown sugar, oats, pecans, and melted butter for the streusel topping.
- Sprinkle the streusel mixture over the batter.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
