  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons melted butter
  • 2 cups cream cheese
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add sour cream, eggs, instant coffee, and vanilla; mix well.
  6. Pour the filling over the crust and bake for 50-60 minutes.
  7. Let it cool and refrigerate for at least 4 hours.
  8. For the ganache, heat the heavy cream until simmering, then pour over dark chocolate chips and stir until smooth.
  9. Pour the ganache over the chilled cheesecake and let it set.
  10. Serve and enjoy!
