Shrimp Scampi Lasagna

An indulgent twist on traditional lasagna featuring succulent shrimp and a buttery garlic sauce.

  • 12 lasagna noodles
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup white wine
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the lasagna noodles according to package instructions, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat, then add the garlic and red pepper flakes. Sauté for 1-2 minutes.
  3. Add the shrimp and cook until pink, about 3-4 minutes. Pour in the white wine and let it simmer for 2 minutes.
  4. In a large bowl, mix ricotta cheese, half of the mozzarella, Parmesan, parsley, salt, and pepper.
  5. In a baking dish, spread a layer of the ricotta mixture, followed by a layer of lasagna noodles, then a layer of shrimp mixture. Repeat layers.
  6. Top with remaining mozzarella and bake at 375°F for 25-30 minutes until bubbly and golden.

Notes

  • Let the lasagna sit for 10 minutes before serving.
  • Pair with a fresh salad for a balanced meal.
