Seafood Stuffed Potatoes Recipe

A delightful and easy recipe for seafood stuffed potatoes, perfect for dinner.

  • 4 large baking potatoes
  • 1 pound lump crab meat
  • 1 cup cooked shrimp, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1 tablespoon garlic, minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Bake in the oven for about 45-60 minutes until tender.
  3. In a bowl, mix the crab meat, shrimp, cream cheese, sour cream, cheddar cheese, green onions, garlic, and lemon juice. Season with salt and pepper.
  4. Once the potatoes are cool enough to handle, cut them in half and scoop out some of the insides.
  5. Mix the scooped potato with the seafood mixture and refill the potato skins.
  6. Bake the stuffed potatoes for an additional 15-20 minutes until heated through and slightly golden.

Notes

  • Feel free to add other seafood or toppings as desired.
  • These potatoes can be made ahead of time and reheated in the oven.
