Roasted Sweet Potato Rounds with Honey & Feta

  • 1/4 cup honey
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice sweet potatoes into rounds about 1/4 inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and paprika.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
  5. Bake for 25-30 minutes or until tender and lightly browned, flipping halfway through.
  6. Once roasted, drizzle honey over the sweet potato rounds and sprinkle with feta cheese.
