  • 3/4 cup feta cheese, crumbled

  • 1 teaspoon salt

  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel the sweet potatoes and slice them into 1/2-inch rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper.
  4. Spread the sweet potato rounds on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and golden.
