Roasted Garlic White Chicken Lasagna Soup

A comforting and delicious soup that combines the flavors of roasted garlic, tender chicken, and classic lasagna ingredients.

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the shredded chicken and cook for another 2-3 minutes.
  3. Pour in the chicken broth and crushed tomatoes; bring to a boil.
  4. Add the broken lasagna noodles and Italian seasoning; reduce heat and simmer until noodles are cooked.
  5. Stir in the ricotta, mozzarella, and Parmesan cheeses until melted and creamy.
  6. Add the fresh spinach and cook until wilted.

Notes

  • For extra flavor, add crushed red pepper flakes.
  • This soup can be made ahead and stored in the refrigerator.
