Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a lined 9×13 inch baking dish.
  3. In a large bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  4. Pour the pumpkin mixture over the crust in the baking dish.
  5. Bake for 25-30 minutes or until the mixture is set.
  6. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
