  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Use-It-All-Up Pesto
  • salt to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil and add quinoa.
  3. Reduce heat and simmer for 15 minutes or until liquid is absorbed.
  4. Remove from heat and let it cool.
  5. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. Add Use-It-All-Up Pesto, salt, and pepper. Mix well.
  7. Serve immediately or refrigerate for later use.
