Quick and Easy Healthy Lunch Box Recipes : Tex-Mex Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let cool.
  5. In a large bowl, combine quinoa, black beans, corn, red bell pepper, avocado, and cilantro.
  6. In a small bowl, whisk together cumin, chili powder, lime juice, salt, and pepper.
  7. Pour dressing over the salad and toss gently.
  8. Serve immediately or refrigerate for later.

Notes

  • For extra flavor, add diced jalapeños.
