  • 4 slices turkey bacon

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup bell pepper, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove from heat and chop into pieces.
  3. In a large bowl, combine the quinoa, turkey bacon, chicken ham, cherry tomatoes, black olives, bell pepper, and basil.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the salad and mix well.
  6. Serve immediately or chill in the refrigerator for later.
