  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 2 avocados, diced
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine black beans, corn, cherry tomatoes, red onion, cilantro, and avocados.
  5. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  6. Once the quinoa has cooled, add it to the vegetable mixture and drizzle with dressing. Toss to combine.
  7. Serve chilled or at room temperature.

  • This salad is great for meal prep and can be stored in the refrigerator for up to three days.
