  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup chocolate chips (optional)
  • 1/4 cup oats for streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Add the dry ingredients to the wet ingredients and stir just until combined. Fold in nuts and chocolate chips if using.
  5. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. In a small bowl, combine the oats and streusel topping ingredients and sprinkle on top of the muffin batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
