- 1 medium pumpkin, peeled and cubed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon nutmeg
- 1 cup coconut milk
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
- Add the cubed pumpkin and vegetable broth; bring to a boil.
- Reduce heat and let simmer until pumpkin is soft, about 20 minutes.
