  • 1/2 teaspoon nutmeg
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the cubed pumpkin and vegetable broth; bring to a boil.
  3. Reduce heat and let simmer until pumpkin is soft, about 20 minutes.
  4. Add cumin, nutmeg, salt, and pepper, and stir well.
  5. Puree the soup using an immersion blender or in batches using a countertop blender.
  6. Stir in the coconut milk and cook on low heat for another 5 minutes.
