  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  4. Add pumpkin puree, vanilla extract, and egg, mixing until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  6. In a small bowl, mix sugar and cinnamon for rolling.
  7. Form dough into balls, roll in cinnamon sugar, and place on the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on baking sheet for a few minutes before transferring to a wire rack.
