  • ½ cup brown sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  4. Add the pumpkin puree, vanilla extract, and eggs to the sugar mixture; mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  7. In a small bowl, mix cinnamon and sugar for rolling.
  8. Roll each cookie dough ball in the cinnamon-sugar mixture before baking.
  9. Bake for 10-12 minutes or until the edges are golden.
