  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Pour the batter into muffin tins lined with paper liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add chocolate chips or nuts.
  • These muffins freeze well; store them in an airtight container.
