  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the pumpkin puree, eggs, milk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into a greased baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cornbread is baking, prepare the cinnamon honey butter by mixing softened butter, honey, and cinnamon in a small bowl.
  7. Once the cornbread is finished baking, let it cool slightly before serving with cinnamon honey butter.
