  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the chocolate chips.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra touch, sprinkle some cinnamon sugar on top before baking.
