  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, sugar, and vegetable oil. Mix well.
  3. Add eggs one at a time, mixing after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Fill cupcake liners 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.

Notes

  • For extra chocolatey cupcakes, add more chocolate chips.
  • These cupcakes freeze well for up to 3 months.
