  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a mixing bowl, combine pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. In a separate bowl, beat the cream cheese until smooth.
  6. Fill each muffin cup halfway with the pumpkin mixture, add a dollop of cream cheese, then cover with more pumpkin mixture.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
