  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin puree, diced apples, sugar, brown sugar, oil, eggs, and vanilla extract.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Sprinkle streusel topping over the batter in each cup.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack.
