Pineapple Chicken and Rice

A simple and delicious recipe for a weeknight dinner featuring tender chicken, sweet pineapple, and fluffy rice.

  • 1 pound chicken breast, cubed
  • 1 cup jasmine rice
  • 1 can (20 ounces) pineapple chunks, drained
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the cubed chicken and cook until browned.
  2. Add garlic and ginger, stirring for about 1 minute until fragrant.
  3. Stir in the soy sauce and black pepper.
  4. Add the rice and pineapple chunks, mixing well.
  5. Pour in 2 cups of water, bring to a boil, then reduce heat and cover. Cook for 15-20 minutes until rice is tender.
  6. Fluff with a fork and fold in green onions before serving.

Notes

  • For extra flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
  • Serve with a side of steamed vegetables for a complete meal.
