- 1 pound chicken breast, cubed
- 1 cup jasmine rice
- 1 can (20 ounces) pineapple chunks, drained
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
- In a large skillet, heat olive oil over medium heat. Add the cubed chicken and cook until browned.
- Add garlic and ginger, stirring for about 1 minute until fragrant.
- Stir in the soy sauce and black pepper.
- Add the rice and pineapple chunks, mixing well.
