Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, vanilla extract, and peppermint extract.
  4. Combine the wet and dry ingredients, then fold in the chocolate chips.
  5. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes.
  6. Let cool completely before frosting.
