Peppermint Mocha Cupcakes

A delicious blend of peppermint and mocha flavors in a festive cupcake.

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the buttermilk, peppermint extract, and vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill the cupcake liners about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool completely before frosting.

Notes

  • For an extra festive touch, top with crushed peppermint candies.
  • These cupcakes can be made ahead of time and frozen.
