Pecan Upside-Down Cake

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt the butter and stir in the brown sugar until dissolved. Add the pecans and stir to coat.
  3. Pour the mixture into the bottom of a cake pan.
  4. In a large bowl, mix the granulated sugar and butter until creamy, then add eggs one by one, followed by vanilla extract.
  5. In another bowl, sift together flour, baking powder, and salt.
  6. Alternate adding the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients.
  7. Pour the batter over the pecan mixture in the cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool for a few minutes before inverting it onto a serving plate.

Notes

  • For extra flavor, you can add a teaspoon of cinnamon to the batter.
  • Serve warm with a scoop of vanilla ice cream for a delicious dessert.
