  • 2 medium zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil, chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
  3. Add the sliced zucchini and cook for about 5-7 minutes until tender.
  4. Add the cherry tomatoes, salt, black pepper, and red pepper flakes; sauté for another 3-4 minutes.
  5. Toss the cooked pasta into the skillet with the zucchini and tomatoes. Add the fresh basil and mix well.
  6. Serve hot, topped with grated Parmesan if desired.
