Oreo Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 cup crushed Oreo cookies
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 cup crushed Oreo cookies (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the oil, eggs, and vanilla extract, then mix with milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the crushed Oreos.
  5. Distribute the batter into the cupcake liners and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool completely before frosting.
  7. For the frosting, beat together the softened butter, powdered sugar, and heavy cream until smooth. Fold in the crushed Oreos.
  8. Frost the cooled cupcakes and top with additional crushed Oreos.

Notes

  • For extra chocolate flavor, add chocolate chips to the batter.
