Mini Chicken Pot Pies

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup frozen mixed vegetables
  • 1/2 cup onion, diced
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the onion until tender.
  3. Add the flour, and stir for 1 minute.
  4. Gradually add chicken broth and milk, stirring until thickened.
  5. Stir in chicken, turkey bacon, vegetables, and seasonings.
  6. Roll out the pie crusts and cut into circles to fit your muffin tin.
  7. Fill each crust with the chicken mixture.
  8. Top with another piece of dough and seal the edges.
  9. Bake for 20-25 minutes or until golden brown.
