  • 1 pound shrimp, peeled and deveined
  • 2 cups cherry tomatoes
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, combine the shrimp, cherry tomatoes, bell peppers, red onion, and garlic.
  3. Drizzle with olive oil, and sprinkle with oregano, paprika, salt, and pepper. Toss to coat.
  4. Spread the mixture in a single layer.
  5. Bake for 12-15 minutes, or until the shrimp are cooked through and pink.
  6. Serve warm.

  • For extra flavor, marinate the shrimp in the seasoning for 30 minutes before cooking.
