- 2 boneless chicken breasts trimmed
- 8 ounces fettuccine pasta
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cook the fettuccine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook until browned and cooked through, about 7-8 minutes per side. Remove and set aside.
- Add garlic to the skillet and sauté for about 30 seconds. Stir in the chicken broth and heavy cream, bringing to a simmer.
- Stir in the Parmesan cheese and Italian seasoning. Allow to thicken for a few minutes.
- Add the spinach and cooked fettuccine, tossing gently to combine.
- Slice the chicken and lay it on top of the pasta. Serve warm.
