Marry Me Chicken Pasta

  • 2 boneless chicken breasts trimmed
  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook until browned and cooked through, about 7-8 minutes per side. Remove and set aside.
  3. Add garlic to the skillet and sauté for about 30 seconds. Stir in the chicken broth and heavy cream, bringing to a simmer.
  4. Stir in the Parmesan cheese and Italian seasoning. Allow to thicken for a few minutes.
  5. Add the spinach and cooked fettuccine, tossing gently to combine.
  6. Slice the chicken and lay it on top of the pasta. Serve warm.

Notes

  • For added flavor, marinate the chicken in Italian dressing before cooking.
  • This dish pairs well with a side salad.
