Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 3 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon sesame oil
  • 2 cups cauliflower florets
  • 1 tablespoon green onions, chopped for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef and sear until browned on all sides.
  2. Add the onion, garlic, and ginger, and sauté until the onion is translucent.
  3. Pour in the beef broth, soy sauce, gochujang, and sesame oil. Bring to a boil.
  4. Reduce heat to low and simmer for about 1.5 hours until the beef is tender.
  5. Stir in the cauliflower florets and cook for an additional 15 minutes.
  6. Serve hot, garnished with chopped green onions.

Notes

  • For a thicker stew, you can use a cornstarch slurry.
  • Adjust the spice level by adding more or less gochujang.
