Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup asparagus, trimmed
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, dill, salt, and pepper.
  3. Place salmon fillets on a baking sheet and brush with the marinade.
  4. Add zucchini, bell pepper, and asparagus around the salmon.
  5. Drizzle the remaining marinade over the veggies.
  6. Bake for 15-20 minutes or until salmon flakes easily with a fork.
