  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 4 cups beef broth
  • 1 medium onion, sliced
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups mushrooms, sliced
  • 1 cup broccoli florets

Instructions

  1. In a large pot, sear the beef cubes over medium-high heat until browned.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Stir in gochujang and soy sauce, mixing well.
  4. Pour in the beef broth and bring to a boil.
  5. Reduce heat and simmer for about 1.5 hours, or until meat is tender.
  6. Add mushrooms and broccoli, cooking until vegetables are tender.
  7. Garnish with green onions before serving.

Notes

  • Adjust the spice level by using more or less gochujang.
  • Serve with cauliflower rice for a complete meal.
