  • 2 cups chicken broth
  • 1 pound chicken breasts, diced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat. Add the chopped onion and diced carrots; sauté until softened.
  2. Add minced garlic, cumin, and paprika; cook for another minute until fragrant.
  3. Add the diced chicken and cook until browned.
  4. Stir in the lentils and chicken broth; bring to a boil.
  5. Reduce heat and simmer for about 30 minutes, or until lentils are tender.
  6. Season with salt and pepper before serving.

Notes

  • For added flavor, you can include bay leaves while simmering.
