  • 1 cup cake flour
  • 1 cup granulated sugar
  • 12 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon lime zest
  • 1/4 cup lime juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, sift together the cake flour and half of the sugar.
  3. In a separate bowl, whip the egg whites until frothy, then add cream of tartar and salt.
  4. Gradually add the remaining sugar while beating until stiff peaks form.
  5. Gently fold in the flour mixture, lime zest, juice, and vanilla.
  6. Pour the batter into an ungreased angel food cake pan.
  7. Bake for 35-40 minutes or until golden brown.
  8. Invert the pan to cool completely before removing the cake.
