Lemon Quinoa Chickpea Salad

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
  3. Let the quinoa cool to room temperature.
  4. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, and parsley.
  5. Add the cooled quinoa to the bowl.
  6. In a separate small bowl, whisk together the lemon juice, olive oil, garlic powder, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately or refrigerate for later.
